Nutritious Salad – Bowl Of Goodness



A grilled chicken salad with green apple and fresh herbs tossed to perfection


For the base of the salad: Assorted lettuce leaves- 1 cup

For the body of the salad:  Boneless chicken breasts- 300 gms (For the marinade on the chicken: Olive oil 1 tsp, salt and pepper, 2 tbsp lime juice, ½ tsp crushed cumin seeds. Apply on the chicken breasts and keep aside for 10 min, using a griller or pan cook chicken breasts on both sides for 6 to 8 min, slice and keep aside).
Green apple- 1, cut into slices/wedges
Cherry tomatoes- 6 to 8 cut into halves

For the dressing of the salad: 2tbsp olive oil, 1tbsp honey, 2tbsp lime juice, ½ tsp crushed black pepper, fresh mint leaves 6 to 8, fresh basil leaves 6 to 8, ½tsp chaat masala

For the garnish of the salad:  Fresh herbs 2 tbsp, sunflower seeds/sliced, almonds 1tbsp


  1. Prepare all the ingredients for the salad as per the list
  2. Place the lettuce leaves in chilled water
  3. Prepare the dressing in a jar and shake well
  4. Combine the body and dressing well and toss
  5. Arrange the leaves on a salad plate
  6. Portion the salad and garnish, serve immediately

Chefs Variations:

  1. Try using boiled or grilled prawns in this salad as a variation
  2. Grilled cottage cheese can be used for the vegetarians
  3. For the dressing try using a blend of fresh basil with olive oil and nuts with a little ginger juice for a varied dressing
