Chicken Hawaiian Delight

CHICKEN HAWAIIN DELIGHT - Aviatorsbuzz

Ingredients:

Chicken breast – 250 gms each, boneless and skinned

For the marination:
  • Olive oil – 1 tbsp
  • Mustard paste – 1/2 tsp
  • Salt and crushed black pepper to taste
  • Mixed herbs – 1/2 tsp
  • Chilli flakes – 1/2 tsp
  • White wine – 2 tbsp
  • All spice powder/garam masala powder – 1/4 tsp
  • Lime juice – 2 tbsp

For the salsa:

  • Cucumber – 1/4 cup small cubes
  • Tomatoes – 1/3 cup small cubes
  • Onion – ¼ cup small cubes
  • Garlic – 1/2 tsp chopped
  • Olive oil – 1 tbsp
  • Lime juice – 1 tbsp
  • Fresh herbs – 1 tbsp
  • Tomato ketchup – 2 tbsp
For the accompaniments:
  • Fresh pineapple slices – 3 to 4

Method:

  • Prepare the chicken breasts, apply the marination on them and keep aside for 20 mins, apply little marination to the fresh pineapple slices as well.
  • Mix all the salsa ingredients together and chill in the fridge for 20 mins. (Raw and cooked version may also be used with the salsa).
  • Heat a grill pan, place the chicken breast pieces on it and cook on both sides. Getting a nice grilled effect on the chicken takes around 4-6 mins on each side.
  • On the side place the pineapple slices as well and grill them too for 2 mins on each side.
  • Start with the plating of the recipe, bowl with salsa on the side, grilled chicken and pineapple slices to go along.
