Bites in Between – Part 1

Snacking between meals has always been a temptation for many. I have been receiving loads of requests from foodies to suggest some easy to make, in between meal bites to munch on, especially during these times when people are on a work from home mode & the temptations and cravings are difficult to resist.

The concept of in between bites is to avoid having large portions of foods and moreover avoid junk and sugars as far as possible. Work on something which can give you a break from work as well as keep you pepped up, something new and different from the routine. 

Here are some of my favourite recipes, something interesting to relish, so go ahead and try them out!

Recipe 1 – Stuffed Cucumber Cups

Ingredients : 3 to 4 green cucumbers, similar sized, washed, cut into equal portions, scooped out carefully, and kept chilled.

For the stuffing :

  • Hung curd – 1 cup
  • Boiled chopped chicken – 1/2cup
  • Sliced olives – 3 to 4 nos
  • Mint leaves – 8 to 10 nos
  • Salt and pepper to taste
  • Scooped out cucumber – to be used back

Method :

  1. Prepare the cucumber cups and keep chilled.
  2. In a mixing bowl combine together the hung curd, chicken, olives and chopped scooped out cucumber and seasonings to taste.
  3. Mix well, stuff the cucumber cups and garnish with flaxseeds, pumpkin seeds, chia seeds, sliced nuts, parsley etc.

Chef’s Variations :

Try using assorted veggies of your choice like carrots, cabbage, sauteed slice mushrooms, boiled sweet corn, sweet potato etc.

Add sliced chicken sausages, chopped salami and boiled eggs also go well for non-vegetarian options.


Recipe 2 – Healthy Pea Dip

Ingredients :

  • Chickpeas/kabuli chana – 1 cup boiled
  • Black eye beans/chauli – 1/2 cup boiled
  • Garlic – 1 tsp chopped
  • Olive oil – 2 to 3 tbsp
  • Lime juice – 1 to 2 tbsp
  • Salt and pepper to taste
  • Chilled water – 2 to 3 tbsp
  • Cashews/almonds/pine nuts – 2 to 3 tbsp sliced
  • Cheese of your choice – 1 to 2 tbsp grated optional

To serve with : Sticks of carrots, celery, white radish, healthy crackers, olives, lettuce leaves and baked chips etc.

Method :

  1. Prepare the basic list of ingredients for the recipe.
  2. Using a grinder jar combine the ingredients for the dip and process it until smooth.
  3. Remove place in a serving bowl, check for seasonings and arrange the accompaniments on the side and serve.

Chef’s variations :

The same dip can be made by adding a little cream cheese to the dip for more flavour.

Additions like mixed herbs, chilli flakes, chopped parsley, dried mint, almond flakes, peanut butter also adds variety.
