Ingredients:
- Sugar – 2/3rd cup
- Melted butter – 1/2 cup
- Eggs – 2
- Bananas – 2 ripe, mashed
- Vanilla essence – 1 tsp
- Maida – 1 and a 1/2 cup
- Baking powder- 1 tsp
- Salt – 1/4 tsp
- Cinnamon powder – 1/4 tsp
For the Topping:
- Castor/powder Sugar – 1/4 cup
- Cinnamon powder – 1/4 tsp
- Melted butter – 1/4 cup
Method:
- Preheat the oven to 180 degrees celsius.
- Grease and line the cupcake moulds.
- In a bowl beat together the eggs, sugar and butter until light and creamy.
- Stir in the mashed banana, vanilla essence and fold in all the dry ingredients.
- Mix gently and pour the mixture into the greased cupcake moulds, bake for 15-18 mins, then using a toothpick, check if they are well cooked in the centre of the cupcakes.
- Using a brush, apply melted butter on the cooled-down cupcakes, lightly dust with a mixture of sugar and cinnamon powder and serve.
